All lettuce and leaves should be fresh-smelling and brightly coloured with no discolouration or signs of wilting.

Greens (except for spinach) should be washed before being wrapped in kitchen paper, bagged in plastic and kept chilled.

The increasingly trendy radicchio varieties should be wrapped dry in plastic and kept chilled for 1-2 weeks.

Note that bitterness will increase with extended storage.
